INGREDIENTS :

Cake:

3 cups cake flour

1 Tbsp baking powder

1/2 tsp salt

1 3/4 cup granulated sugar

Zest of 1 lemon

1 cup unsalted butter, room temperature

4 large eggs, room temperature

2 tsp lemon paste (optional)

1 cup buttermilk

1/3 cup fresh lemon juice

Frosting:


1 cup unsalted butter, room temperature

6 cups confectioner's sugar, sifted

6-8 Tbsp fresh lemon juice

1/4 cup poppy seeds

Optional: one small drop yellow gel food coloring


Garnish:

Very thin slices of lemon

Mint leaves

Directions:


Preheat oven to 350°F. Grease, flour, and line 3 9-inch baking pans with parchment.

Whisk flour, baking powder, and salt. Process granulated sugar with lemon zest in a food processor. Cream butter and lemon sugar in a mixer, add eggs one at a time, then lemon paste.

Alternate adding dry ingredients and buttermilk with lemon juice to the mixer. Divide batter among pans.

Bake 23-25 minutes. Cool, then remove from pans.

For frosting, cream butter and sugar, adding lemon juice for consistency. Stir in poppy seeds and color if using.

Frost cake layers, garnish with lemon slices and mint.
